Fig, Ricotta and Caramelized Onion Sausage Paleo Pizza

Football season is all about the pizza, pasta and cookies.

That is how I grew up with family football Sunday’s watching the game and eating all day long. Thanks to my good friends at Cappello’s I maintain the same traditions and with a conscious lens.

My family also was known to have a fig tree or two which means this time of year we enjoyed picking the figs and eating them right off the tree. I grew up enjoying figs looking forward to the season every year. This pizza uses the seasonal fig with delicious ingredients for a meal that everyone will love. An added bonus is a dairy free ricotta for that authentic Italian BAM.

Fig, Ricotta and Caramelized Onion Sausage Paleo Pizza

Time - 45 minutes

Ingredients:

Directions:

  • Heat oven to 350 degrees.

  • Chop onion to desired BAM. Add onion and salt to heated pan cooking over medium heat for 20 minutes until caramelized.

  • Cover Cappello’s naked crust with ricotta. Place on cookie tray or in cast iron (preferred method).

  • Chop figs in quarters and Mulay’s sausage into small rounds.

  • Combine arugula, olive oil, salt & lemon to taste in a bowl mixing well.

  • Once onion is done add to the naked crust on top of the ricotta base.

  • Take figs and sausage and place on top of onions on the pizza.

  • Place in oven cooking for 20 minutes or until desired done.

  • Remove from oven and drizzle the Date Lady BBQ sauce on top in a zigzag pattern.

  • Put arugula mixture on top.

  • Slice and enjoy!
