I have never been more excited for a recipe as I was to recreate this little number. Who doesn’t want some chicken and waffles that are Paleo perfect?
BAM. BAM. BAM is all I can say.
Being a minimalist I personally do not see myself owning a waffle iron. Having Kitchfix take care of the waffle part is one of my life nirvana moments and what makes this recipe easy for anytime of day.
I met the fine folks at Kitchfix at a trade show where they were serving chicken and waffles. I have wanted to recreate this recipe with a twist since our meeting over a year ago, but at the time I was on the road so recipe creating was not so easy for me. Now that I am back living in CA only two weeks and you can be sure this was on the top of my list. I have no words to describe how excited I am to finally make this delicious dish with a Chef V twist and share it with you all. You have to make this. Cassava flour is key to the crunch factor too.
Herb Crusted Paleo Chicken and Waffles w/ Rosemary Infused Maple Syrup
Serves - 4
Total time - 30 minutes
2 pounds boneless, skinless chicken breasts (thin)
1 box Paleo Waffles - Kitchfix
1 cup Otto’s cassava flour (code Paleoboss10 saves)
3 tablespoons chopped fresh rosemary
2 rosemary twigs
2 tablespoons of chopped fresh thyme
2 pasture raised eggs
1/4 cup Epic duck fat (or preferred fat)
1/2 cup of maple syrup
2 teaspoons Redmond real salt (code BAM2019 saves)
1 teapsoons fresh ground black pepper
* Optional grass-fed butter
Grab small saucepan and add maple syrup and rosemary twigs. Put on low and infuse slowly. No need to boil.
Heat oven or toaster oven to 350.
Take a large soup bowl or plate and place cassava flour, salt, pepper and chopped herbs mixing with your hands.
Take eggs and beat in a bowl until well mixed.
Heat duck fat or desired oil in cast iron or preferred pan on medium heat.
Dip chicken in egg coating completely. Followed by placing in cassava mixture working to cover the entire breast.
Place in cast iron cooking until crispy about 15 minutes turning halfway. Remove to oven safe plate keeping warm in the oven until all are done.
Put four waffles in the oven for 10 minutes turning half way.
Once all are cooked assembly to YUM starts - beginning with the waffles - start to stack with the waffle, chicken, waffle, chicken approach.
Remove rosemary stalks from stove and pour warm infused rosemary syrup directly on the stack. You have the option of buttering the waffle first adding syrup placing chicken on tip and repeat finishing off with a final syrup pour over entire stack.
This meal is great anytime of day and Otto’s cassava flour adds a crunch that will have you hooked (code paleoboss10 saves).
Feel free to play with spices and even without. You can’t go wrong and the sky is the limit.
